Delicious prawn pancake served with chilli jam
Wow what a meal. This was inspired by a Jamie recipe and agfter tweaking it to suit us I think it’s perfect and well worth shouting about. Midweek I try to cook healthier meals and this one definitely works on that count. Healthy and delicious.
Ingredients
- 3 large eggs or 4 medium
- 130 gm self raising flour
- 120 ml water
- 1 tsp Chinese 5 spice
- splash of olive oil or a few sprays like I used
- 250 gm raw peeled king prawns, any size will work tho
- 2 tbsp sesame seeds
- 1 tbsp soy sauce, I used low salt lighter sauce
- I bag of any mixed stir fry veggies about 300gm
- chilli jam to decorate and serve as a side
Method.
Heat your bbq up to about 170c and once to temp pop on a 12″ cast shallow pot and spray with oil.
Beat the eggs in a bowl then add the flour, spice, water and once nice and smooth add a handful of the prawns, I cut them into about 1cm chunks.
Add the veggies in a bowl and add the soy sauce, I also added a little pepper but not really needed I was just being clever 🙂
Once the pan is hot sprinkle in the sesame seeds and cook for a few seconds then add the remaining whole prawns and cook for a minute or so. Then pour over the batter mix and straight away scatter over the stir fry veggies. then cover with a lid and leave on the heat for about 10 to 12 minutes.
Remove the lid and you can see the pancake is cooked by gently lifting an edge so remove from the heat and turn out like you would a cake but onto a cutting board. Brush over some chilli jam and let to rest for a minute. Serve with a pot of chilli jam. This plate needs nothing else.
Tips.
Any stir fry veg would work perfectly with this meal, it’s tasty and filling too whilst remaining light.
