Pulled Pork Sausage Rolls

Every time I cook Pulled Pork on the bbq we have lots of leftovers. Mainly because it’s a long cook which I bbq over 6 to 10 hours so I use a big piece of pork shoulder which is a nice cheap cut. I will cover that cook on another post.

Todays recipe is all about leftovers.

Ingredients.

  • 300g pulled pork leftovers, shredded
  • 3 tablespoons olive oil
  • A large red onion chopped
  • 80gm Cheese
  • Tablespoon of fresh parsley
  • 2 packs of prepared puff pastry
  • I beaten egg

Method.

Roll out the pastry and rest as per instructions. Fry off the onions in the olive oil until soft and taking on a little colour. Then whilst the pastry is resting wizz up everything including the onions in a food blender, I use my Ninja for this and it only takes a few seconds. Once combined smooth out over the pastry and roll up using the beaten egg to seal the joint. Chop to the desired size and make a couple slits across the sausage rolls. I make 4 sausage rolls out of each pack of pastry so 8 large rolls with this recipe. Brush with egg and place on a baking tray.

Pop into a pre heated bbq for about 25-30 minutes until gorgeous and golden. I cook all 8 at once via 2 layers on my Kamados. These are absolutely sensational when hot and even better the next day for lunch. The taste of the pulled pork makes these the best sausage rolls I’ve ever eaten.

Tips.

Last time we added sage and onion stuffing balls to the mixture when we wizzed it up. This gave a super herby flavour and an extra hit.
