Oriental sticky plum and chicken

Another one of our favourite traybake meals to cook and eat and so easy on the bbq and another amazing one pot meal and great calories too.

Ingredients for 4 people but half can be frozen

  • Spray oil as always
  • 8 skinless and boneless chicken fillet thighs
  • 2 red onions quartered
  • 5 cloves garlic crushed
  • 1 red chilli finely chopped
  • 1 tbsp balsamic vinegar
  • 1 tbsp light soy sauce (low salt for us)
  • 2 tbsp runny honey
  • salt and pepper

Method

This meal really works well as a basic traybake by placing the chicken, plums and onions in a baking tray, mixing the vinegar, garlic, soy, chilli and honey in a pot and pouring over and popping into a nice hot 220c bbq for about 30-40 minutes but I prefer the finished meal when cooked as below which is a bit more effort but I think worth it.

Spray a little oil in a dutch oven or frying pan and brown the chocked on a nice high heat to seal in the flavours. We leave our chicken thighs whole but if we are serving with stir fry veg and noodles then we slice the chicken. Once browned pop in the onions and plums for a few minutes to take on a little colour and soften.

Meanwhile in a bowl mix the remaining ingredients to create a sticky sauce. Once the chicken, onion and plums Are ready pop into a roasting dish and cover in the sticky sauce. Pop into a nice warm 220c bbq and cook for around 30 minutes until everything is a sticky mess 🙂 chicken should read at least 73c to be safe but this dish works well with chicken cooked to a higher temperature to get the stickiness.

Tips.

Serve with a plain rice or with stir fry veggies and noodles for a larger meal. We normally batch cook this and do oner of each.
