Chunky cheese smash burgers
Smash burgers tonight, Actually chunky smash burgers with cheese. I normally do smash burgers adds flat as possible to enhance the flavour but today we fancied chunky.
Ingredients per person
- 100 gm 5% beef mince
- cheese slice
- fried onions
- seeded bun
- sliced beef tomato
- burger sauce
Ingredients for burger sauce
- 2 tbsp mayo
- 2 tbsp American mustard
- fine grated onion
- fine grated pickle
Method.
Mix all the sauce ingredients together and tweak mayo/mustard to suit your tastes.
Roll the mince into a ball and drop onto a hot griddle alongside the onions. Season the beef with your fav rub, we used a Texas steakhouse tonight. Cook for a few minutes then flip over and add the cheese. At this point I spray the griddle with cold water and cover the burgers with a metal pot to steam, this does wonders for the cheese.
Then pop the buttered rolls onto the griddle to toast. Then the best part, build your burger any way you fancy. We did burger with cheese, then onions then tomato the pickle and sauce yum yum yum,
Tips.
I do these so often and the key is to tweak the recipe to suit you. Dont overcook the beef either.
