Cheesy pasta with char grilled chicken

Midweek meal so we try to be a little healthier and calorie conscious so tonight I cooked cheesy pasta with some char crilled chicken.

Ingredients for salad

  • Tagliatelle or your preferred pasta serving per person
  • half tbsp Olive oil
  • 2 skinless chicken breasts
  • I onion
  • 1 bell pepper
  • 2 cloves garlic
  • half tub or reduced fat cream cheese
  • a few chunks of parmesan (we use leftover rind)
  • a little pasta water to loosen as required

Method.

Firstly setup your bbq to cook at about 180c. Pop on the chicken breast after rubbing with your fave rub, Tonight we used A&O feather duster. Then pop on a large cast pan with a drop of olive oil and fry off the onion until soft, then add the garlic and the pepper and cook until all soft and delicious. This takes about 15 minutes in total on mine. I then add the cream cheese and any seasoning but doubtful you will need any. Then pour in the cooked pasta with a little of the pasta water and combine. Take off the heat and pop onto your serving plate and decorate with fresh chopped parsley and then slice the chicken breast and place onto.

Perfect low ish calorie meal.

Tips.

Great pasta dish that works well with chicken but also any other meat you might have including leftovers.
