Chicken Caesar Sala with crispy bacon
Every now and then we fancy something a little lighter for our dinner and after a few mega meals this week we decided on making a Chicken cesar salad tonight with crispy thin bacon. I used yesterday’s leftover Pampushki pull apart rolls which were perfect.
Ingredients for salad
- Bread for croutons
- 3 tbsp Olive oil
- 2 skinless chicken breasts
- I Romaine lettuce
- Extra thin bacon
- Block of hard cheese like parmesan
Ingredients for Caesar dressing
- Clove o f garlic
- 2 or 3 anchovies from a tin
- Handful of grated cheese from the above block
- 5 tbsp mayonnaise
- 1 tbsp white wine vinegar
- seasoning
Method.
Firstly setup your bbq to cook the chicken and fry the croutons and any bacon. I set my Kamado classic 3 half direct with a cast grill and half indirect with a steel grill for the chicken. I coated the chicken with my fave Angus & Oink rub which is sweet bones and butt and popped them in at around 180c turning now and then.
Whist that was cooking I made the dressing which was nice and easy and delicious. Firstly crush the garlic and mash the anchovies, I used a fork but there must be an easier way ??? then add some fine grated cheese and the mayo. Then a spoonful of white wine vinegar and season to taste. We also added a little water to loosen it up a bit.
Back to the grill…..
I then cut up the bread and popped them in a cast pan on the bbq and then about 10 strips of the very thin streaky bacon. as the bacon cooked I removed it to cool and tossed the croutons into the bacon fat then removed them from the bbq to cool.
Once the chicken was tested at 73 using my Thermapen I removed that to cool and slice up. then set about making the salad.
Firstly tear in the lettuce into a large bowl. Then add half the croutons, half the chicken and some of the cheese shaved with a potato peeler and then half the dressing. Toss well before adding the remaining croutons and the chicken and cheese and bacon.
Finish with a crack of black pepper.
Tips.
This is a fabulous lighter but filling meal and works perfectly as a main meal or a lunch. Use your favourite bread to make croutons or try making my PAMPUSHKI TEAR AND SHARE BREAD To go with it. The dressing is easy but I also love jar dressings too 🙂
