Dijon Pork

Another one pot meal cooked on the Kamado classic 3 which was outstanding and full of  flavour and not calories.

Ingredients for 4 people

  • As always I use low calorie spray rather than oils by the spoonful
  • 1 large onion chopped
  • 2 large cloves garlic crushed
  • 600gm tenderloin of pork cut into 1″ slices
  • 250gm sliced button mushrooms
  • 250ml chicken stock I used a stockpot but cube would be fine
  • 4 tbsp Dijon Mustard
  • 1 tsp English mustard powder
  • 3 tbsp low fat cream cheese
  • Fresh Parsley
  • Salt and pepper to season

Method One pan cook.

Using my dutch oven without a lid I cooked the onion for about 10-12 minutes until nicely soft and starting to colour and then add the garlic and pork slices and cook for about 3-5 minutes each side to take on some nice colour and are well sealed.

Then add the mustards, stock and cook for about 30 minutes again no lid needed because it will help the stock reduce and help the flavours.  Once done check the pork with your thermometer to make sure it’s reached the safe temperature and remove from the heat. Stir in the cream cheese and chopped parsley and season if required. I did not use any seasoning the mustard’s were enough.

Thats it, a really simple and super delicious one pot meal brimming with goodness and only about 380 calories each  if you divide it by 6 which is a good portion.

Tips.

We have done the pork before and served with new potatoes and green veg so whatever you fancy works with this flavourful dish. Today we served it with fresh wholemeal bread that I made.
