Pork Cassoulet with Colcannon

Ive made tonights meal before but not in the bbq and not as a combination either but both worked extremely well and will be on the menu again soon.  I found “almost” this Pork recipe on a forum I visit but I can’t remember who posted but I chopped and changed it to suit my lower cal version here.

Ingredients for 4 to 6 people Pork Cassoulet

  • As always I use low calorie spray rather than oils by the spoonful
  • 500 gm of very lean pork, I use chops that I heavily trimmed because they were an Aldi specially
  • 1 large onion chopped
  • 4 large cloves garlic crushed
  • One carrot chopped
  • Stick of celery slices
  • 2 tbsp Fresh Thyme leaves
  • 2 tbsp Tomato puree
  • 2 tsp Fennel seeds
  • Tin of Haricot beans
  • tin chopped tomatoes (with or without herbs)
  • 400ml veg stock (cube or stockpot will work)
  • 1 red wine stock pot I use oxo
  • Salt and pepper top season

Method One pan cook.

I used my Connected Joe bbq for this one so set it up at about 160 indirect and poop on my mid size Dutch oven with a spay of oil. Pop in the pork and brown off which can take 10 minutes in the bbq. Then add the onion, Garlic, Carrots and stir in and soften for 5 minutes. Add the puree, Fennel and Thyme and stir well then everything else and give a really good st=it then pop on the lid for 45 minutes.

Then remove the lid and give another good stir and leave uncovered for around 30 minutes. Just about enough time to make the potato dish.

Thats it, a really simple and super delicious one pot meal brimming with goodness and only about 300 calories each  if you divide it by 6 which is a good portion.

  • As always I use low calorie spray rather than oils by the spoonful
  • 500 gm of good mashing potatoes
  • 1 large onion chopped or a nice leek
  • 1 large cloves garlic crushed
  • half a green cabbage trimmed and thinly sliced
  • salt and pepper

Method for Colcannon

Firstly peel and chop the potatoes and boil ready to mash.

Meanwhile spray oil in a pan then add the onions or preferably a leek and garlic and fry off for a couple minutes, then pop in the cabbage for 5 minutes then turn off the heat and set aside, I did this in another dutch oven so popped the lif on.  Mash the potatoes and combine with the canbbage and onion mix. season to taste and enjoy.

Tips.

We have done the pork before and served with new potatoes and green veg so whatever you fancy works with this flavourful dish.
