Kerala prawn curry

I cook lots of curries and have done for many years and they don’t come much easier than this Kerala prawn dish. This is an amazing simple and very tasty one pot meal made o9n my Kamado Joe classic 3. All the great flavours and lots ofd fresh low calorie ingredients.

Ingredients for Kerala for 2 people

  • 250 gm raw king prawns
  • 250 gm cherry tomatoes halved
  • 1 sweet pepper thinly sliced
  • 1 large onion sliced
  • 2 cloves garlic crushed
  • 1″ chunk of fresh ginger grated
  • 1 400 ml tin of reduced fat coconut milk (Sainsburys is fab)
  • 100 gm spinach chopped
  • Juice off a lime
  • Fresh coriander to serve
  • tbsp olive oil

Ingredients for masala sauce

  • 2 tsp mustard seeds
  • 1 tsp black pepper
  • 1 tsp coriander
  • 1 tsp cumin
  • half tsp turmeric
  • 1 tsp chilli powder
  • 4 curry leaves
  • half tsp salt

Method.

Heat your bbq to around 180c and once hot pop on a cast iron pot, I use a traditional Indian Karahi. Pop in the oil and add the Tomatoes, pepper, onion, ginger and masala spices inc salt and combine well then cook for around 15 minutes storing often. My bbq tends to get carried away keep opening and closing, well probably me haha so keep em peeled. Once well combined and softened  add the coconut milk, spinach and prawns and cook for about 7 minutes until the prawns are cooked. Add the lime juice then taste and season as needed.

Thats it, really is a simple delicious meal

 

Tips.

We served this with brown rice and naan breads and a little creme fresh.
