Buttermilk pancakes

Buttermilk Pancakes

Perfect for a treat breakfast anytime of the year.

Ingredients for about 8 sweet pancakes

  • 300 gm plain flour
  • 2 tsp Bicarbonate of soda
  • 1 tsp Baking powder
  • 2 tbsp caster sugar (dont use if your going savory)
  • 2 large or 3 medium eggs
  • 2 tsp Vanilla Extract
  • 1 400 ml tin of reduced fat coconut milk (Sainsburys is fab)
  • 250 ml pot of Buttermilk
  • 100 ml milk

Method.

Add all the dry ingredients to a bowl and combine, I use my Kitchenaid mixer. In a jug add the remaining ingredients and whisk. Gradually add them to the mixer whilst on low and once all mixed in turn the speed up until you have a lovely consistent mix then pop into a gig ready to make. 

I use my plancha but these work in a frying pan too. Oil the pan or base and pour in to make the desired size, I go between 6 and 8 inches and then after a minute Or so flip them over and let the other side cook. You’re looking ideally for a medium heat and a nice light brown cook for these. Then dust with icing sugar and serve with whatever takes your fancy, We love maple syrup and fruit but Skys the limit with toppings.

Thats it, really is a simple delicious breakfast.
