Pork and black pudding burgers

Pork and Black pudding smash burgers with spicy sweet potato wedges

I got inspiration for this recipe from a friend Rob on insta. These were absolutely perfect and by far the best burgers I have ever eaten. If you want to impress then look not further.

 

Ingredients for the smash burgers

  • 100 gm 5% pork mince per burger
  • I large slice of black pudding per burger chopped up
  • your favourite bbq rub
  • oil to cook
  • A nice brioche bun or make your own

Ingredients for the sweet potato wedges

  • 1 large sweet potato per person. This recipe is for 2 so 2 for us cut into similar size wedges
  • 6 tbsp olive oil
  • half tsp smoked paprika
  • half tsp cayenne pepper
  • quarter teaspoon garlic powder
  • quarter teaspoon cinnamon powder
  • quarter tsp salt

Method.

Heat your bbq to around 180c, I used half grill for the potato and half cast iron for the burgers on my Kamado classic 3.

Cut the potatoes into wedges and coat with all the ingredients, I leave them to marinade whilst the grill heats up. Then once at temperature spread over the grill to cook being careful to turn once or twice. Mine took around 14 minutes in total to be perfect. Just before they finished I brushed them with the remaining oil mixture.

Meanwhile mix the pork mince with the chopped black pudding and form a ball. Sprinkle with your favourite rub, I used Angus&Oink sweet bones and bacon. Pop onto the hot cast iron and flatten as required. Recently I like a fatter burger but either way it works. Once well cooking turn over and pop on some cheese, Alongside this pop in a few rashers of streaky bacon too.

Once finished dress the brooch buns to your taste. We started with apple sauce then burger then bacon then mayo withy more rub.
