Chicken Satay with peanut sauce and cucumber dip
My first time cooking Chicken Satay and I decided to go the whole hog as usual and create the peanut sauce too, and a lovely little cucumber salad.
Ingredients for the Chicken satay and peanut sauce.
- small chunk of fresh ginger
- 2 garlic cloves
- Juice of a lime and zest
- 1 tsp clear honey
- 1 tbsp soy sauce
- 1 tbsp curry powder, I use my own curry masala
- 4 tbsp smooth peanut butter
- 500gm chicken breast
- 200ml coconut milk
Ingredients for the Cucumber dip.
- Whole cucumber
- 3 tbsp white wine vinegar
- 1 tbsp golden caster sugar
- sweet chilli sauce I use blue dragon
- half a bunch of chopped coriander
Method.
Peel the ginger and finely grate it and tip it into a bowl. Repeat with the garlic and lime zest. Juice the lime, then mix it in a bowl with the honey, soy, curry powder and peanut butter. Give it a good mix, adding a small splash of water if it’s too stiff although this can be loosened up later. Pop half in a cast pop ready to heat gently for 10 minutes or so and save the other half to marinade the chicken.
Cut the chicken into chunks or strips, I like strips if I am using skewers like this coz it gives more surface area and looks pretty cool too. Pop into a dish and cover with the remaining peanut sauce. Ideally this would be done a couple hours before cooking although these are strong flavours and chicken takes flavour well.
Skewer your chicken, I used authentic bamboo for this although I have a ton of fancy skewers 🙂 bamboo looked good in the finished dish. I cooked them on my Kamado Joe indirect at about 200c and they took about 30 minutes, could have halted that direct but I love indirect with sauce.
Meanwhile heat the sauce slowly and keep warm, mine separated slightly so I just blitzed it with a hand blender back to perfection.
