Brisket Chilli
Another fabulous brisket leftover meal, simple to make and absolutely delicious plus this made 4 more meals to be frozen
Ingredients.
- 2 large onions diced
- I large red pepper diced
- 2 garlic cloves, chopped
- fresh chilli
- 1tbs smoked paprika
- 1 tbs chilli powder, we make our own so spicy not hot
- 1 1/4 teaspoon kosher salt
- 2 tablespoons tomato puree
- tin of kidney beans
- tin of mixed taco beans
- 2 cans chopped tomatoes
- 2 tablespoons worcestershire sauce
- 1 glass of red wine or port
- 500gm beef mince, I used my brisket trimmings that I minced with the Kitchenaid attachment.

Method.
In a nice size Dutch oven on the bbq cook the mince until browned, no need for fat with brisket trimmings. Then drain the fat and discard, set aside the mince and cook the onions and peppers, Once nicely softened add the garlic and chilli and then pop the mince back in along the wine and boil away. Then in with the tomatoes, puree and beans. Bring back to the simmer and add the worcestershire sauce and seasoning if required.
I let this cook away for 30 minutes with the lid on and then add the chopped brisket and anything else you want, This dish takes fresh tomatoes well if you have any going spare.

Tips, and ideas for next time.
Tonight I served this with boiled rice and it was wonderful. This is also fabulous with baked potatoes and also added to your fave hot dogs.
