Szechuan Pork Noodles on the Ninja Foodie
This is my absolute fav way to enjoy a Chinese meal at home and amazing at only around 400 calories per portion.
Ingredients for the Noodles
- 1 tsp Szechuan pepper freshly ground
- 5 tbsp tahini
- 5 tbsp rice vinegar
- 1 tbsp sugar or low cal alternative
- 5 tbsp soy sauce
- pack of 2% pork mince around 400gm
- 1 tbsp garlic and ginger paste
- 5 tbsp oyster sauce
- half tsp Chinese 5 spice
- 2 heads of pak choi chopped into chunks
- handful of green beans chopped
- 1 tin beansprouts
- 200gm dried egg noodles (I cook mine in chicken stock)
Ingredients to serve
- Fresh coriander
- Red sliced chilly
- chopped spring onion
Method
Set the foodie to sear and spray the bowl with low cal cooking oil, I use Canola from Costco. Add the turkey mince and brown which will take around 7 to 8 minutes. Add the garlic and ginger paste and the 5 spice and cook for another minute or so. Stir in the oyster sauce and combine well ensuring everything is covered. If you have not used oyster sauce before then be warned it’s very thick so pour into a bowl before hand to make life easier. Once combined remove the pork from the bowl and set aside. I cover in foil to keep it warm whilst I am boiling the noodles which I do in stock as per the instructions.
Combine the pepper, Tahini, Soy sauce, Rice vinegar, sweetener in a small bowl. Pour into the foodie bowl and fry through for a minute. Add the Pak Choi and beansprouts and beans and cook for a couple of minutes. Pop the cooked noodles into the foodie pan and stir well, once combined pop the pork mixture back in and stir through. If the mixture is a little drier than you like you can add a little of the noodle stock to loosen it but mine was fine.
Serve with the Coriander, Chilly and Spring Onion to dress.
Tips.
If your noodles are pre cooked you can skip the removal of the pork, and just continue as one long cook
