Tomapork with Stuffed Peppers
This was a nice simple cook. Tomapork from my local butcher along with stuffed peppers, potatoes, stuffing balls and veg. Mostly the peppers were from leftovers which is such a bonus.
Ingredients for Peppers.
- A nice fresh pepper or 2
- Couple spoonfuls of cooked rice
- Tomato Puree
- A glug of W sauce (dont make me spell it
- a small onion
- 2 sun-dried tomatoes from a jar
- Clove of garlic
- Lemon juice
- chopped Parsley
- Salt and pepper
- Smoked Paprika
- Chese
Method.
Real simple one tonight, Chop the peppers in half and cleaned them out. Then combine everything in a bowl except the cheese and mix together. Spoon into the peppers and top with the cheese grated. Pop on the bbq for around 25 minutes and serve warm,
For the Pork like all of my meats it was cooked to temperature not time and in this case it took about 25 minutes to reach a perfect 63C, then rested for 5 before slicing up.
Tips.
You can pretty much add anything to these peppers and they will be amazing, I have used chilli before but we had Dylan tonight so calmed it down a bit. These also work well with a mince filling too.
