White chocolate, peanut butter and jam cake
This cake was inspired buy a Jamie Oliver recipe and its NOT often I say that haha
Ingredients for the blondie cake
- 200gm unsalted butter
- 200g golden caster sugar
- 200gm self raising flour
- 200gm white chocolate Buttons are perfect
- 4 eggs
- 4 tbsp crunchy peanut butter
- 4 tbsp of your favourite jam
Method
I use my kitchenaid mixer
Mix the butter, sugar, eggs and flour until smooth and then pop in the chocolate buttons. Scrape the mixture into a baking tray lined with greaseproof paper. scoop the peanut butter and Jam into a wbowlk and mix, you might need a little hot water to get a decent consistency and once done pour over the cake batter and combine.
Pop into a free heated BBQ 180c for about 35-40 minutes until cooked.
Chill as long as you can be good, then enjoy
Tips.
Great as a desert with custard or with a cuppa. You can used low cal brown sugar but with 200gm butter, honestly what’s the point
